Boat Recipe Series: Jalapeño & Pimento Cheese


Boat Recipe: Jalapeño Cheese  

  
Ingredients 
  • 3 bags shredded extra sharp white cheddar
  • 1 jar of diced jalapeños drained
  • 3-6 large tablespoons mayonnaise - I use just enough mayonnaise to hold the jalapeño cheese together. Duke’s Mayonnaise is the best- but use just enough!
Instructions
  • Mix with a sturdy wooden spoon, and it takes some effort! It should have a very dense texture. 
     
 

Boat Recipe: Pimento Cheese

  

Ingredients

  • 3 bags shredded extra sharp yellow  cheddar
  • 1 Cup Pimentos, or roasted red peppers if you like a milder taste, minced
  • 3-6 tablespoons mayonnaise use just enough mayonnaise to hold the pimento cheese together. Duke’s Mayonnaise is the best- but use just enough!
  • 3/4 Tsp Tabasco or other Vinegar Based Hot Sauce—  (optional)
  • Pepper to taste
Instructions
    • Mix with a sturdy wooden spoon, and it takes some effort! It should have a very dense texture. 
    TIME SAVING TIP: I buy store bought pimento cheese and add 1-2 bags of finely grated sharp cheddar cheese to it, to get the more dense texture and more intense cheese flavor. 

    How to Serve:

    Serve with celery, cucumber spears, your favorite crackers, with bread to make a sandwich, your morning toast, on cheeseburgers or with ham on biscuits and some honey mustard — or my favorite - Benne wafers!
