2 (6.5 oz) jars roasted red peppers, drained. Can use pimentos if prefer
4 bags shredded extra sharp cheddar
¼ tsp ground cayenne (more or less to taste!)
1 tsp fresh lemon juice
3 tbsp kewpie mayonnaise (you can use regular mayo, add more if needed!)
¼ cup grated Parmesan cheese
½ (8 oz) pkg cream cheese, softened
Mix all together in mixing bowl with hand mixer or by hand.
Spread on bread, cut to size
16 slices Pepperidge farm very thin white or white country bread with bread crust cut off.
